Need a quick B12 fix?


Did you know that three quarters cup of drained clams provides you with over 1000% of your daily B12 requirement? Here's an easy peasy pasta dish idea for you. I made this last night as I nurse my way out of a respiratory virus. I have no idea if this will help heal me, but I'm looking for easy comfort.

Dinner for two:

Olive oil, 2 tbsp.

Garlic cloves, 2 thinly sliced

Diced fire roasted canned tomatoes, 1/3 cup drained

Fresh tarragon, 3 or so sprigs

White whine 1/4 cup (oops, wine). See, I'm not very happy about being under the weather.

Cooked spaghetti (You decide how much you want.)

Boiled clams, 10 oz. can

Salt and pepper to your taste

Grated Parmesan amount (your choice)

Snipped fresh tarragon leaves, 1 tsp.

Begin by adding olive oil, tomatoes, sliced garlic and tarragon sprigs to a saute pan.

Cook for approximately 10 minutes on medium heat.

Add the wine.

Add the cooked pasta to the pan. Don't drain all of the water from the pasta. The starch will be a good addition for your sauce.

Continue to cook for about 10 minutes more.

Remove the tarragon sprigs from the pan and discard.

Drain the water from the can of clams saving about 2 tbsp. of the liquid.

Add clams and the 2 tbsp. of the reserved liquid to the pan.

Gently stir/toss the pasta and pan ingredients together.

Taste to see how much salt and pepper you need to add.

Your dish should be ready to eat by now.

When you are ready to serve, top with the Parmesan and fresh snipped tarragon leaves.
